My family eats a lot of rice and lentils and loves spices! So, when I learned about the Middle Eastern dish mujadara, I had to try it. It quickly became a family favorite for “Meatless Monday,” especially with my son. He even learned to make this for his vegetarian friends at college. This is flavorful and tangy with lemon and warm spices.

This delicious and filling vegan meal is easy to make in a rice cooker or Instant Pot. If you don’t have either, you can make it in a pot on the stove. Make the crispy onions and spiced, milk-free “yogurt” topping while the rice and lentils cook.

1 scant cup raspberries
1 tbsp lemon juice
1 tbsp chia seeds or flax seed meal
½ cup SunButter Sunflower Butter, Natural or Creamy
⅔ cup gluten-free oats
2 tbsp brown sugar
In a small saucepan, heat the raspberries and lemon juice over low-medium heat, stirring occasionally. While cooking, crush the raspberries. Cook until raspberries are soft, about 10 minutes. Remove from heat and stir in seeds. Set aside to cool.

In a food processor or blender, pulse together SunButter, oats, sugar and protein powder, if using, until combined. Scrape mixture into a shallow container.

Gently spread the jam through the mixture but don’t fully combine. Refrigerate for at least 15 minutes.

Roll the mixture into bite-sized balls. Refrigerate for a few hours before serving. Store in the refrigerator or freezer.

Use a small, spring loaded cookie scoop to make balls the same size.
Butter and Margarine: Butter is a dairy product made from cow’s milk. Margarine typically contains milk or soy, but there are milk-free and soy-free versions available.


Gluten: Gluten is a protein found in specific grains (wheat, spelt, kamut, barley, rye). Other grains are naturally gluten-free but may have cross-contact with gluten-containing grains. Ingredients

2 tsp Lyle’s Golden Syrup®
1/2 tsp vanilla or almond extract
assorted food coloring (optional)
2 tsp rice milk
1 cup confectioners (powdered) sugar

Directions

In a small bowl, stir together confectioner’s sugar and milk until smooth. Beat in Lyle’s golden syrup and vanilla until icing is smooth and glossy. If icing is too thick, add more golden syrup.

Divide into separate bowls and add food colorings as desired. Dip cookies or paint them with a pastry brush.

This recipe dries smooth and shiny and works great for cookies. It wouldn’t work for making flowers or anything like that though.

You might have to add a little extra rice milk and syrup to get it to the right consistency for cookies.

Corn syrup can be used for golden syrup.

Ingredients

2-4 Tbsp vegetable oil
2 onions, chopped
2 lb pork, cubed
2-4 tsp chili powder
3 Tbsp honey
2 – 3 lbs sweet potatoes, peeled and cut into 1 inch cubes
1 1/2 cups orange juice
2 15 oz cans black beans, rinsed and drained
2 Tbsp margarine
2 Tbsp flour
1/4 cup fresh cilantro, chopped
salt and pepper

Directions

In large saucepan, saute onions until they are somewhat soft. Add pork cubes and cook on medium high until lightly browned. Add chili powder, honey, salt and pepper. Add sweet potatoes and orange juice. Cover with water.

Simmer until sweet potatoes are soft.

Knead margarine and flour into a small ball. Add black beans and margarine/flour ball. Cook until thickened (a few minutes). Remove from heat, add cilantro.

Season with salt and pepper to taste.
